As is known, there are many pathological problems studied in the field of medicine. Below we will mention some poisonings from food products. The data presented in the literature indicate that nitro compounds are found in many products (for example, natural vegetables, fruits), water and air. In agricultural relations, people are often poisoned due to improper use of fertilizer products, their excessive dosage in food products and their consumption. In this case, it can be seen that as a result of the binding of a free oxygen atom to the state of methemoglobin (Fe2+ atom) in the blood, the functional system of the blood is disrupted and, as a result, many physiological processes in the body are disrupted. In the analysis of the data considered, the study of the toxicity of nitrates and nitrites is of interest not only from the point of view of substantiating permissible concentrations, but also to resolve questions regarding the long-term effects of poisons and determining the carcinogenic risk of these compounds. For a middle-aged person with a body weight of 50 kg, the daily intake of nitrates and nitrites (permissible) should be 200 mg NO3, 45 mg in terms of nitrogen. That is, nitrate compounds should be 4 mg per 1 kg of body weight (V.T. Mitchenkov). The recommended maximum concentration of isopropyl nitrate in the air should be 0.005 mg / l (CH 245-71). Nitrate intoxication has been studied in various types of animals by inhalation, oral administration and dermal administration. M.N. Kolyadich, R.A. Nishiy, Sleight and Atallah studied in guinea pigs, N.G. Demeshkevich. L.Ya. Vasyukovich, N.Krasovsky, V.A. Aleksandrov in rats, and S.N. Yunusova, O.G.
