In this study, inulin derivatives containing acidic -COOH groups in their structure were synthesized. To obtain inulin derivatives, the polysaccharide was initially halogenated using thionyl chloride. Samples with different chlorine contents were obtained and their structure was proven. At the next stage, some features of the chemical modification of alanine with chlorine-containing inulin derivatives were studied. Reaction conditions have been found that make it possible to obtain samples of inulin derivatives with different physicochemical properties.
