Abstract

Maqolada zamonaviy restoran amaliyotlarida oziq-ovqat chiqindilarini kamaytirish va qayta ishlashning innovatsion yondashuvlari kompleks tahlil qilingan. Barqaror restoran konsepsiyasining nazariy asoslari, oziq-ovqat chiqindilarini manbada kamaytirish strategiyalari, kompostlash, biogaz va anaerob hazm qilish orqali qayta ishlash texnologiyalari koʻrib chiqilgan. Sunʼiy intellekt, IoT, blokcheyn va mobil ilovalar asosidagi zamonaviy yechimlarning samaradorligi baholanib, yetakchi xalqaro restoran tarmoqlarining ilgʻor tajribasi tahlil qilingan. Oʻzbekiston restoran sektorida ushbu innovatsion amaliyotlarni joriy etish boʻyicha amaliy tavsiyalar ishlab chiqilgan va kutilayotgan iqtisodiy-ekologik samarasi baholangan.
