In the research work, the amount of free amino acids and carbohydrates in the plant Capparis spinosa L., adapted to the
conditions of salt stress in the Southern Orolqum region and distributed in the vicinity of the Zarafshan River in the Samarkand
region, was compared and analyzed. As a result, it is determined that the amount of free amino acids in the samples of the
Southern Orolqum region of C. spinosa plant is high: cysteine (1.92 mg/g), methionine (1.34 mg/g) and proline (0.46 mg/g). By
analyzing the amount of carbohydrates in the samples of the Southern Orolqum region, glucose (0.45%), fructose (0.21%) and
sucrose (0.01%) were found to be 3.6 times more than the total amount of carbohydrates per leaf compared to the samples of the
Samarkand region.
