MORPHOFUNCTIONAL CHANGES IN RAT ADRENAL GLANDS UNDER THE INFLUENCE OF FOOD COLORANTS (E-171, E-173) (EXPERIMENTAL STUDY, UZBEKISTAN)
To investigate the impact spectrum of widely used food additives (E-171 and E-173) on the human body, experimental research was conducted using laboratory rats. The study focused on morphological and functional changes in the adrenal glands, as well as alterations in the blood and endocrine systems. Enzyme activity related to the liver and adrenal glands, as well as hormone levels, were analyzed. The results showed that regular consumption of these food additives leads to adverse effects on the organism. E-171 was found to accumulate in the adrenal glands, causing irreversible morphofunctional changes and disrupting systemic metabolic processes. Additionally, the food dye E-173 induced significant changes in the rats’ bodies. During the experiments, elevated concentrations of cortisol and aldosterone were observed in blood serum, which affected the body's water-electrolyte balance and altered the sodium-to-potassium ion ratio.
