Modern human health is determined by the nature and structure of nutrition. Functional food products are one of the tools for the prevention of alimentary-dependent diseases. Despite the wide variety of such products and a wide range of biologically active substances, their industrial production has not reached the required scale and is associated with various restrictions. This review article is devoted to the analysis of scientific data on existing problems in this field of production. The influence of such factors as the formation of the raw material base, the safety of biologically active substances and their safety, the use of technological techniques, and the standardization of finished products is considered
