STUDY OF THE AMINO ACID COMPOSITION OF SOYBEAN PROTEIN FRACTIONS
The role of soy protein in the development of obesity should not be underestimated, given its status as a major component, the
presence of bioactive compounds, and its high biological value. Moreover, soy protein consumption in both diabetic and non-
diabetic individuals reduces kidney damage and inflammation by lowering the glomerular filtration rate and improving creatinine
clearance, opening up potential opportunities for its use as a therapeutic agent for chronic kidney disease. A diet rich in soluble
fiber reduces carbohydrate absorption and lowers plasma glucose concentrations in diabetics. Similarly, studies have shown that
soy fiber intake enhances fecal bile excretion and reduces fat absorption, thereby providing protection against hyperglycemia.
