Soybean (Glycine max) is considered a crop of immense economic importance due to its high content of oil (18%) and high-quality
protein (~40%). Consequently, soy proteins are currently widely used in the food industry (for example, as isolates in the production
of sausage products), the pharmaceutical sector (in the development of antitumor and antibacterial drugs), and medicine (to lower
cholesterol levels and prevent conditions such as asthma, kidney disease, and osteoporosis).
Numerous epidemiological studies have shown that the consumption of soy and the diverse phytonutrients it contains contributes
to the prevention and treatment of oncological and cardiovascular diseases, metabolic disorders, and musculoskeletal conditions,
as well as gynecological, endocrine, and renal pathologies - particularly in perimenopausal women.
