PHYSICOCHEMICAL PROPERTIES, STRUCTURE AND COMPLEX FORMATION OF PECTIN SUBSTANCES WITH METALS
This study investigates the physicochemical properties of pectic substances (PS) and their complexes with potassium and magnesium (PS-K, PS-Mg, PS-K-Mg). Structural and compositional analysis was carried out using Fourier-transform infrared (FTIR) spectroscopy, nuclear magnetic resonance (NMR), elemental analysis, scanning electron microscopy (SEM), gas chromatography (GC), and high-performance liquid chromatography (HPLC). The degree of esterification, molecular weight, and solution viscosity were determined
