ANOR POSTLOGʻI TANINLARINI QAYTA ISHLASH UCHUN TANNAZA ISHLAB CHIQARUVCHI ZAMBURUGʻ SHTAMMLARINI OLISH VA XARAKTERISTIKASI

Ushbu ishda tarkibida yuqori молекулали polifenolik birikmalar, jumladan tanin mavjud bo‘lgan anor po‘sti ekstraktini kompleks
biotexnologik qayta ishlash masalalari ko‘rib chiqildi. Pleurotus ostreatus, Aspergillus oryzae, Aspergillus niger, Aspergillus
terreus zamburug‘lari hamda Saccharomyces cerevisiae xamirturushlari tomonidan tannaza fermenti ishlab chiqarish imkoniyatlari
o‘rganildi. Standart Chapeq ozuqa muhitiga asoslangan holda uning tarkibini bosqichma-bosqich o‘zgartirish orqali ferment
preparati sintezi dinamikasi tadqiq qilindi. Turli mikroorganizmlar tomonidan tannaza saqlovchi ferment preparatining o‘ziga xos
faolligi bo‘yicha taqqoslama jadval tuzildi. Skrining natijalariga ko‘ra taninlarni parchalovchi fermentlarning eng yuqori faolligini
namoyon etgan Aspergillus niger va Aspergillus oryzae zamburug‘lari eng samarali produсentlar sifatida tanlab olindi. Tadqiqot
yakunida tanniinlarni yuqori darajada parchalash qobiliyatiga ega bo‘lgan moslashtirilgan (adaptatsiyalashgan) shtammlar
(Aspergillus niger va Aspergillus oryzae) olindi. Ushbu shtammlar anor po‘sti ekstrakti taninlarini biokonversiya qilish jarayonida
samarali qo‘llanishi mumkinligi aniqlandi.
