In this study, pomegranate peels from two local varieties, Karadon Kizil and Kazakhskiy, were extracted using various organic
solvents. The composition of the resulting extracts was analyzed using high-performance liquid chromatography (HPLC). The
carbohydrate content of fructose, glucose, sucrose, and maltose, as well as antioxidant activity, were compared in the pomegranate
peel extracts. Water, ethyl acetate, and ethyl alcohol were used as solvents for pomegranate peel extraction. A wavelength of 254.4
nm was used to analyze the composition of the extracts.
